Mexican Baked Potato

There’s not much more comforting than a baked potato on a cold winter’s evening. Enjoy with a side salad and glass of red to seal the delicious deal.

Serves: One

Time: One hour and 10 minutes

Ingredients

  •  1 large potato
  •  1 tablespoon olive oil
  •  1 teaspoon butter
  •  1/2 cup shredded cheddar cheese
  •  1 teaspoon sour cream
  •  1 teaspoon chives
  •  salt and pepper, to taste


Method

Preheat oven to 230°C. Clean the potato and with a fork poke holes around its surface. Pour olive oil onto a paper towel and wipe it all over the potato skin. Sprinkle the potato with salt and bake it for about an hour. Using a knife cut a ‘T’ into the potato and pull it open. Spoon in the butter and then add the cheese, sour cream and chives on top. Serve with a side salad.
