These low-sugar Sticky Date Muffins are a healthier way to enjoy the gooey sweetness of an old favourite. Warm them up in the microwave for a truly wonderful anytime treat.

Ingredients
Muffins:
- butter or spray for greasing
- 150ml water
- 12 dates
- 1 1/2 ripe bananas, peeled and roughly chopped
- 3 tablespoons flour
- 1 tablespoon vanilla extract
- 2 eggs
- 1 teaspoon honey
- 1/2 teaspoon baking powder

Topping:
- 5–6 dates, chopped
- juice of half an orange
- 3 tablespoons water
- 1 teaspoon vanilla extract or essence
- 1 teaspoon honey
Method
Preheat oven to 185°C. Grease muffin tins with the butter.

Slowly heat dates and water in a small saucepan and boil until dates are soft. Mash them with a fork and set aside.
Place the flour, eggs, banana, vanilla extract and baking powder into a blender or food processor, mixing well to aerate. Add dates to the banana mixture and combine. Evenly distribute into the muffin moulds. Bake for about 20–22 minutes.
To make the topping, add all ingredients to a small saucepan and cook over low heat for about 3–4 minutes, or until the dates break down. Mash with a fork to make a smooth paste. Set aside.
Allow the muffins to rest for 5 minutes before placing them on a wire rack to cool. Spoon sticky date topping onto the tops of each muffin and serve.
