There is nothing better than homemade soup, and our recipe for Tomato Soup is quick and easy to make. A good tip is to double the ingredients to have extras during the week.

Ingredients
- 1 1/2 cups tomato juice
- 1 tablespoon tomato paste
- 4 spring onions, minced
- zest of 1/2 lemon
- 1 tablespoon fresh lemon juice
- 1/2 cup sour cream
- 1 teaspoon caster sugar
- 1/4 teaspoon dried thyme
- 1/4 teaspoon curry powder
- freshly chopped chives or basil
- salt and freshly ground pepper, to taste
Method
Whisk together all ingredients in large saucepan over medium heat. Heat for 10 minutes; do not boil. Ladle into individual bowls and garnish with fresh chopped chives or basil.
