Wild Rice Salad

This incredibly easy dish has healthy written all over it. It’s loaded with wild rice, nuts, dried fruit and fresh herbs. Whip it up in less than 30 minutes and serve as a side to your choice of meat, or enjoy it on its own!

Serves: 2

Ingredients

    • 100g mixed rice, such as wild rice
    • 20g mixed nuts of your choice
    • handful each of fresh basil, mint or other herbs
    • 20g dried apricots
    • extra virgin olive oil

 

 

Method
Cook the rice according to the packet instructions until tender. Drain, then allow to cool.

Roughly chop the nuts, pick and roughly chop the basil and mint leaves, then roughly chop the apricots.

Combine with the rice, season with sea salt and black pepper, then drizzle with oil. Serve with grilled meat or fish.
