For a healthy twist on this popular dish, cannellini beans and pumpkin mash were added to give you an extra dose of vegies and a boost of fibre to keep you fuller for longer.
Serves: 4
Preparation: 15 minutes
Cook: 1 hour
Ingredients
- 1 brown onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stick, finely chopped
- 400 g lean lamb mince
- 1 1⁄2 cups (375ml) beef stock
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 1 1⁄2 teaspoons dried Italian herbs
- 400g can cannellini beans, drained and rinsed
- 300 g butternut pumpkin, peeled, chopped
- 1 large potato, peeled, chopped
Method
Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook onion, carrot and celery, stirring, for five minutes or until softened slightly.
Add lamb and cook, stirring to break up lumps, for about five minutes or until browned. Stir in stock, Worcestershire sauce, tomato paste and herbs. Bring to the boil. Reduce heat and simmer, stirring occasionally, for 30 minutes or until thickened. Stir in beans and simmer for a further two minutes.
Meanwhile, boil, steam or microwave pumpkin and potato until tender. Drain. Transfer to a large bowl and mash until smooth. Season with salt and pepper.
Preheat oven to 200°C. Spoon lamb mixture into 4×1 cup (250ml) capacity ovenproof dishes. Spoon mash on top. Lightly spray with oil. Bake for 20 minutes or until golden brown. Serve.
To refrigerate: Store unbaked pies, covered, in ovenproof dishes, for up to two days. When ready to serve, uncover and bake pies, adding an extra 5-10 minutes cooking time to ensure filling is thoroughly heated through.
To freeze: Store unbaked pies as above for up to 2 months. Thaw overnight in the fridge and bake as above.
