Simple Baked Sea Bass

Good Friday is when fish is traditionally served for dinner and this sea bass baked in paper parcels is the perfect dish to treat family and friends. Although sea bass makes for a delicious meal it can sometimes be hard to find or expensive, barrumundi is just as tasty and is both readily available and affordable.

Ingredients
6 sea bass fillets
1 onion, finely sliced
2 green bell peppers, seeds removed and thinly sliced
4 tomatoes, chopped
2 bay leaves
2-3 cloves of garlic
2 tablespoons chopped dill
Salt and freshly ground black pepper
Melted butter
Juice of 1 lemon

Method
Sauté the onion, garlic and green pepper in a little butter. Add the tomatoes, bay leaves and lemon juice, season with salt and pepper and cook gently for about 10 minutes.

Cut six pieces of greaseproof paper, approximately 20cm x 40cm. Brush one side with melted butter and fold over in half lengthways. Fold over the edges on each side twice, creating a bag and leaving an opening.

Place a fish fillet in each bag. Spoon in the vegetables, sprinkle in the chopped dill and fold over the open ends to seal. Brush the bags with a little water and bake in a moderate over for 15-20 minutes.

Serve immediately in the bags, slashed open to reveal the fish within.
