Ingredients
- 1/2 lemon, zested, plus 1 teaspoon lemon juice
- 1 heaped teaspoon lemon curd
- 60g tablespoon cream cheese
- 75g blueberries
- 2 rough oatcakes, crushed
Method
In a bowl, mix together the lemon zest, lemon curd and cream cheese.
Gently crush half the blueberries with a fork and add the lemon juice.
Add remaining blueberries to the cream cheese and lemon curd mixture.
Place the crushed blueberries in the bottom of a glass, and then top with the lemon/blueberry cheese mixture.
Sprinkle over with oatcake crumbs and garnish with some lemon zest and a blueberry.
