If you’re after a nutrition-packed brekky, then this is a great recipe to try out. Such a simple recipe, these pancakes are super easy to whip up at any time, and are a great way to use up those overripe bananas.
Serves: Three
Time: 10 minutes
Ingredients
- 1 medium ripe banana (the riper, the better!)
- 2 tablespoons quick oats*
- 1 large egg, beaten
- 2 tablespoons chopped walnuts (optional)
- 1 tablespoon butter
*Check label for gluten-free
Method
In a medium bowl, mash ripened banana until smooth using a fork. Mix in egg and oats.
Melt a dollop of butter in a large non-stick frying pan over medium-low heat.
Pour batter to make about three pancakes. Top with walnuts and cook for 3–4 minutes. Flip and cook another 3–4 minutes, until golden.
Serve immediately with maple syrup or honey as desired.
