Our recipe for Spare Ribs with homemade BBQ sauce makes the perfect meal to enjoy over a leisurely lunch. Pork ribs are inexpensive and full of flavour, and once cooked, will have your mouth watering.

Ingredients
- 2 pork spare ribs, 500g each
- 2 tablespoons chilli powder
- coarse salt, to taste
- ground pepper, to taste
- 1 tablespoon butter
- 1/2 small onion, grated
- 2 cloves garlic, minced
- 1 1/2 cups tomato sauce
- 1/3 cups cider vinegar
- 2 tablespoons Worcestershire sauce
- 1/4 teaspoon cayenne pepper
Method
Preheat oven to 200°C. Season ribs with chilli powder, salt, and pepper. Stack slabs on a double layer of foil and wrap tightly. Place on a rimmed baking sheet. Cook until meat is fork-tender – about one and half to two hours.
Meanwhile, make the BBQ sauce. In a medium-sized saucepan, melt butter over medium heat. Add onion and garlic, and season with salt and pepper. Cook for three minutes, or until soft. Add the tomato sauce, vinegar, Worcestershire sauce and cayenne pepper. Bring to a simmer. Cook, stirring occasionally, until slightly thick – about five minutes. Set aside.
Heat grill to medium-high and lightly oil the surface.
Carefully remove ribs from foil, pouring off any accumulated liquid. Brush ribs generously with sauce and grill until charred – about two minutes per side. Serve with extra sauce, if desired.
