Sweet Potato Nachos

We don’t skimp on flavour with our healthy Sweet Potato Nachos, so enjoy them without the guilt – they’re nutritious and won’t break your New Year’s resolution to eat healthier.

Serves: Four

Time: 30 minutes

Ingredients

  • 2 medium-sized sweet potatoes
  • 1 tablespoon olive oil, plus extra for greasing
  • 1 teaspoon chilli powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/3 cup canned black beans, rinsed and drained
  • 1/3 cup grated reduced-fat Cheddar cheese
  • 1/3 cup chopped tomato
  • 1/3 cup chopped avocado


Method

Preheat the oven to 220°C and cover a baking pan with foil and lightly grease with olive oil. Prepare the sweet potatoes by peeling and slicing thinly. In a bowl, add the sliced sweet potato and toss with the olive oil, chilli powder, garlic powder and paprika. Spread evenly on the foil and bake for 10 minutes, then flip over the sweet potato slices and bake for another 10 minutes until crisp.

Remove from the oven and sprinkle with cheese and beans. Return to the oven for about two minutes until the cheese has melted. Remove and add the tomato and avocado on top before serving.
