The Cheat’s Noodle Lasagne

They say all good things take time. Well, this cheat’s take on a classic recipe breaks that rule. Our Cheat’s Lasagne is wonderfully simple and takes no time to assemble – perfect for a midweek night.

Serves: 2–3

Ingredients

  • 1 teaspoon olive oil
  • 300g minced beef
  • 1 teaspoon chilli flakes
  • 1 onion
  • 1 small green capsicum
  • 2 spring onions
  • 1 clove garlic
  • 1/2 carton sour cream
  • 1 tablespoon tomato sauce
  • 1/2 tin tomato soup
  • 1/2 packet of noodles
  • grated cheese – try a mix of parmesan and mozzarella, if you like

Method
Preheat oven to 175°C.

In a medium fry pan, heat oil over medium heat and fry onions and garlic until softened.

Add the mince and fry until browned, then add the capsicum. Fry until mince is cooked through, and capsicum is softened but still crunchy. Sprinkle with chilli flakes and season with salt and pepper.

Then, add tomato sauce and soup, and bring to the boil. Remove from heat and allow to cool slightly before folding in sour cream. Set aside.

Next, boil noodles in hot water until cooked. Drain well. Place a thick layer of noodles in an oven dish, then add a layer of the meat sauce and grated cheese. Repeat this process until the meat sauce mixture is used up. Add a healthy dose of grated cheese over the top.

Bake in oven for 15–20 minutes, or until cheese topping is golden.

Enjoy with a glass of dry red and a fresh garden salad.
