Tim Tam Cheesecake

An even more delicious way to enjoy Tim Tams for dessert is to impress your dinner guests with this Tim Tam Cheesecake. It’s the perfect treat for your next special occasion.

Serves: 10

Ingredients

    • 125g chocolate ripple biscuits
    • 75g butter, melted
    • 1 tsp malt powder
    • 375g cream cheese, softened
    • 300g Tim Tams
    • 180g white chocolate, melted
    • 300ml thickened cream
    • 1/2 cup caster sugar
    • 2 tablespoons water
    • 1 teaspoon vanilla extract
    • 1 teaspoon gelatine

Method

Grease a 20cm round cake pan and line with baking paper.

Using a food processor, blend the chocolate ripple biscuits until they are fine crumbs then add the melted butter and malt powder and process until well combined.

Press the mixture into the base of the cake tin so it is flat and even. Set aside.

Bring a small saucepan of water to the boil.

Using a small, heatproof bowl, sprinkle the gelatine over the water before standing over the boiling water and stirring until the gelatine has melted. Set aside to cool for five minutes.

Using an electric mixer, beat the cream cheese, vanilla extract and sugar until it forms a smooth mixture. Add the thickened cream and beat until combined. Repeat with the white chocolate and gelatine mixture.

Roughly chop two-thirds of the Tim Tams before stirring through the cream mixture. Spoon the filling over the base you prepared earlier and make sure the top is smooth.

Refrigerate for at least three hours or until set.

Roughly chop the remaining third of the Tim Tams and sprinkle over the top of the cheesecake.

Serve and enjoy!
