There’s nothing quite as nice as a freshly-baked Apple Shortcake, especially when the recipe belonged to a beloved grandmother. Taken from the notebook of her 95-year-old gran, Dulcie May Booker, Natalie Oldfield brings this simple yet classic dessert back to life.
Serves: 5-6
Ingredients
- 2 1/2 cups self-raising flour
- 1 1/2 cups sugar
- 190g butter
- 2 eggs, lightly beaten
- 2 cups apples, peeled, sliced and cooked
- milk, for brushing
Method
Sift flour into a bowl, add sugar and stir to combine. Rub in butter and then add egg to form soft dough. Press half the dough into a greased slice tin, cover with cooked apple. Roll out the rest of the dough and place on top of apple. Brush over with milk.
Bake 20–30 minutes at 180°C. Sprinkle with icing sugar and slice while hot.
