Watermelon Granita

Our Watermelon Granita is the ideal treat on a hot summer’s day. It is a time-consuming method but, once finished, will be well worth the wait.

Serves: Four

Time: Seven and half hours 

Ingredients

  • 1/2 cup caster sugar
  • 1.2kg seedless watermelon, rind removed and flesh roughly chopped
  • 2 teaspoons lime juice


Method

Place sugar and one cup of cold water in a medium saucepan over low heat. Cook, stirring until sugar is dissolved. Increase heat to high and add watermelon. Bring to the boil. Reduce heat to medium. Simmer for five minutes and remove from heat. Stand for 10 minutes. Place watermelon mixture in a food processor and process until smooth. Strain into a large jug and discard solids. Stir in lime juice. Pour mixture into an 18cm x 28cm slice pan. Freeze for three hours. Using a fork, flake mixture to break up ice crystals starting to form. Cover with plastic wrap, then foil. Freeze for four hours, flaking mixture every one hour, or until completely frozen. Serve.
