Coconut Prawns

There’s no denying that prawns are a luxury so if you’re going to treat yourself, you may as well make sure they’re truly delicious. Our Coconut Prawns fit the bill perfectly.

Serves: Four

Time: 30 minutes

Ingredients

  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs, beaten
  • 3/4 cup bread crumbs
  • 1 cup shredded coconut
  • 500g raw large prawns, peeled and deveined with tails attached
  • vegetable oil

 

Method

In a medium bowl, combine flour, salt and pepper. In a second bowl beat the eggs and in a third bowl combine the breadcrumbs and coconut. Dip the prawns into the flour, then the eggs, and then into the coconut mixing, pressing gently so it sticks. Place coated prawns on a plate. Over a medium heat, add oil to cover the bottom of a large pan. Fry the prawns in batches. Flip after two minutes and fry the other side for two minutes or until golden brown. Place the prawns on a plate lined with a paper towel as you fry the rest.

Serve with sweet chilli sauce and enjoy.
