Serves: 2–3
Ingredients
- 1/2 red chilli
- 3 sprigs coriander, chopped 1/3 cup chopped mint
- lemon juice
- 1 small carrot, diced
- 1/2 red capsicum, diced
- 1/2 green capsicum, diced
- 1/4 cucumber, diced
- 1/2 tomato, diced
- 1/2 onion, diced
Method
Remove the seeds from the chilli, dice and then mix with coriander, mint and lemon juice. Mix with the rest of the vegetables.
