The simplest dishes are often the best. If, like many of us, you’re trying to eat less meat, then this easy gnocchi is the recipe for you. It has the added advantage of being a lovely, creamy pasta without all the usual calorie culprits. Enjoy it with a crisp glass of pinot gris and your meal will be a complete joy.
Time: 6 minutes
Serves: 2 generously
Ingredients

- 1 ripe avocado

- handful of basil leaves

- 1–2 garlic cloves

- 35 g (1/4 cup) pine nuts

- 400g gnocchi

- 1 1/2 tablespoons of extra virgin olive oil
Tool kit:

- food processor or blender

- large saucepan
Method
Boil a full kettle. Peel the garlic cloves and place in the food processor or blender.
Scoop in the avocado flesh and add the pine nuts, basil, 1 1/2 tablespoons extra virgin olive oil and some salt and black pepper. Blitz until smooth.
Pour the boiling water into the saucepan, season generously with fine sea salt, and add the gnocchi. Cook according to the packet instructions, then drain.
Stir through the avocado pesto and drizzle with extra virgin olive oil.
Serve immediately.
